Dark hard and dry crust, sometimes oiled yellow colour, interior of a straw colour, hard, crisp and granular but tender texture. A rich salty flavour of bread, hazelnut and fruity, sturdy with the age. Its delicately perfumed aroma is spicy without being overwhelming.
